RETREAT SAMPLE MENU

DAY 1 FRIDAY NIGHT


Aloha-Style Baby Back Ribs     ​AssortedServed with white rice, Mac Salad, Carrot Cilantro and Chile slaw, Tuscan Kale Caesar salad
Charcuterie Plate     Assorted meat and cheeses, dried fruit, local honey, assorted fresh berries, fresh baguette, Artisan and seeded cracker
Tart     Simple strawberry Dulce de Leche shortbread tart
Brownies     Tahini Swirl Brownies 

​​DAY 2 SATURDAY


Breakfast     The Energizer Smoothie, GF Cranberry Orange Muffin, Pumpkin Walnut Muffins with Maple Cream Cheese Glaze
Snack      Tropical Acai Bowl

Lunch     Garlic Shrimp or Camarones Enchipotlados (Spicy Shrimp) served with white rice.  Alternative - Sumac-spiced Chicken with flat bread. Also          available in GF/VEG
Dinner     Salt Encrusted Fish (whole catch) with Lemon-Dill Beurre blanc. Served with Shaved Root salad, white rice, Ginger Garlic green beans
Dessert     sSemolina crusted cheesecake

Day 3 Sunday


Breakfast    The Veggie Smoothie (anti-inflammatory), Apple Cinnamon Streusel Muffin with Butter Pecan topping, Raspberry Lemon Poppy seed muffins, Assorted fresh fruit
Snack     Healing Coconut Turmeric Smoothie Bowl
Lunch     Poke bowls (Spicy Tuna or Shoyu Ahi), Grilled Lamb Meatballs (with flat bread, cucumber yogurt and pickled red onions), Persian Herb Omelet
Dinner     Kailua Pig and Kailua Jack Fruit, Candy-stripe beet and carrot slaw, Spanish Red Onion Orange salad, Ginger-scented rice, Mac salad,   Herb salad (with Feta, roasted red peppers, and toasted nuts)
Dessert     Roasted Pineapple with honey, creme fraiche, and Pistachios

Day 4 Monday

Breakfast     Scrambled Eggs and Eggs made to order

Meats     Bacon, Fried Spam, and Portuguese sausage

Sides     White rice and Fruit platter
